But here’s something you may not know about Ming Tsai, something that is very important to me: he is an advocate for food allergy awareness. Like me, Ming Tsai has a child with food allergies. He was the first chef in the country to create a reference book that lists each allergen for every menu item in his restaurant. Massachusetts, where Ming Tsai’s restaurants are located, was the first state to mandate that restaurants advise diners about food allergies and notify servers of allergies and that restaurant staff have training about food allergies.
