Rice bowls are one of my go-to weeknight dinners. They are quick to make — especially with some advance planning, namely cooking the rice ahead of time — and infinitely customizable. For this reason, rice bowls are the solution to pleasing picky eaters. Put out a bunch of toppings and let each member of the family customize his or her own bowl.
We make all kinds of rice bowls west of the Loop, but everyone’s favorite is the Burrito Bowl. My teenager is slightly obsessed with a certain fast Mexican food chain known for its burritos. I just about blew her mind when I suggested we make our own burrito bowls at home. I don’t even charge extra for avocado.
Nevertheless, when making burrito bowls at home, avocado is a must. But I never seem to have ripe avocados on hand when I need them! Do you have this problem? And the avocados sold at the grocery store are almost always rock hard and need to spend several days on the counter before anyone could even think about eating them. Not very helpful when you are serving burrito bowls tonight.

If you omit cheese and sour cream, these burrito bowls are dairy-free and even vegan. Plus, because the base for the bowl is rice, this recipe is natuarlly gluten-free as well. In other words, if you need to accommodate a lot of different dietary restrictions, I got you. Burrito bowls is the way to go.

Ingredients
- 1 15 oz. can black beans, rinsed and drained
- 2 cups cooked rice
- 12 oz. frozen corn kernels, cooked according to package directions
- 1 pint grape tomatoes, halved
- 1 cup shredded Mexican cheese
- WHOLLY® SIMPLY AVOCADO™ in Sea Salt or Garlic Herb
- 1 lime, halved
- Serrano or jalapeno pepper, sliced
- 2 scallions, white and light green part only, sliced
- 1 bunch cilantro, minced
Instructions
- Place the black beans in a small saucepan and heat over medium heat until warmed through.
- Divide the rice between the bowls.
- Top each bowl with beans, corn, tomatoes, cheese and WHOLLY® SIMPLY AVOCADO™.
- Spritz each bowl with lime juice.
- Garnish as desired with hot peppers, scallions and cilantro.
