Rice bowls are one of my go-to weeknight dinners. They are quick to make — especially with some advance planning, namely cooking the rice ahead of time — and infinitely customizable. For this reason, rice bowls are the solution to pleasing picky eaters. Put out a bunch of toppings and let each member of the family customize his or her own bowl.
We make all kinds of rice bowls west of the Loop, but everyone’s favorite is the Burrito Bowl. My teenager is slightly obsessed with a certain fast Mexican food chain known for its burritos. I just about blew her mind when I suggested we make our own burrito bowls at home. I don’t even charge extra for avocado.
Nevertheless, when making burrito bowls at home, avocado is a must. But I never seem to have ripe avocados on hand when I need them! Do you have this problem? And the avocados sold at the grocery store are almost always rock hard and need to spend several days on the counter before anyone could even think about eating them. Not very helpful when you are serving burrito bowls tonight.
That is why I was happy to discover WHOLLY® SIMPLY AVOCADO™, a pure, wholesome avocado dip. It’s avocado that’s ready when you need it. For purists, there is SIMPLY AVOCADO™ Sea Salt and for the more adventurous, SIMPLY AVOCADO™ Garlic Herb. You can see how smooth and creamy SIMPLY AVOCADO™ is from the picture.
You can find SIMPLY AVOCADO™ at Walmart in the produce section shelved with dips and other WHOLLY® Avocado products. While you are there, be sure to pick up some grape tomatoes, Serrano peppers, cilantro and limes to enhance your burrito bowl!
Because beans are a natural fit in any burrito bowl — my family likes black beans the best — this is an easy dinner to make vegetarian. If you omit cheese and sour cream, these burrito bowls are dairy-free and even vegan. Plus, because the base for the bowl is rice, this recipe is natuarlly gluten-free as well. In other words, if you need to accommodate a lot of different dietary restrictions, I got you. Burrito bowls is the way to go.
So, as the weeks get busier and busier this holiday season, make dinner nice and simple. Pick up some SIMPLY AVOCADO™ and your favorite burrito bowl toppings for a quick and easy meal that is guaranteed to please everyone at your table.
