Mango Salsa
 
Ingredients
  • 2 ripe mangos, peeled and cut into a small dice
  • 1 medium red onion, finely diced
  • 2 plum tomatoes, seeded and diced
  • 1 jalapeƱo pepper, seeds and ribs removed and minced*
  • 2 scallions, white and light green parts only, sliced
  • Lime
  • Salt and pepper to taste
Instructions
  1. Combine all the diced fruits and vegetables in a large bowl.
  2. Add the zest and juice of the lime and stir to combine.
  3. Season with salt and pepper.
  4. Cover and chill at least one hour before serving to allow the flavors to develop.
Notes
*As always, use caution when working with hot peppers. I recommend wearing rubber gloves.
