Easiest Ever Fruit Crisp
- Fruit filling:
- 4 cups mixed, sliced stone fruit.
- 1 TB corn starch
- ½-1 cup granulated sugar
- 1 tsp cinnamon
- Zest and juice from half a lemon
- Topping:
- 1½ cups all-purpose flour
- 1 cup old-fashioned rolled oats
- ¾ cup brown sugar
- ½ tsp cinnamon
- Pinch salt
- 1 stick (4 oz.) unsalted butter, melted
- Preheat oven to 350. Butter the bottom and sides of a 2 qt glass baking dish.
- Place the sliced fruit in the dish and toss with the corn starch, sugar, cinnamon and other spices, if using, and lemon juice. Set aside.
- In a medium-sized bowl, combine the flour, oats, salt, brown sugar, and cinnamon and stir until well mixed.
- Pour melted butter over the flour mixture and stir with a fork until the mixture is moistened and begins to form clumps.
- Pour the crisp topping over the fruit and spread in an even layer.
- Bake for 1 hour or until the topping is brown and crisp and the fruit juices and bubbling.
- Serve with vanilla ice cream or creme fraiche.
