Raw Veggie Salad with Yogurt-Sumac Dressing
 
Ingredients
  • 3 miniature cucumbers, halved and chopped
  • 1 pint grape tomatoes, halved
  • 1 bunch radishes (about 6-7 radishes), washed, trimmed and sliced
  • 2 bulbs fennel, halved, cored and sliced
  • 1 bunch scallions, white and light green parts only, sliced
  • ½ cup chopped flat-leaf parsley
  • 1 cup plain Greek yogurt
  • Zest and juice of one lemon
  • ½ tsp. sugar
  • ½ tsp kosher salt
  • ½ tsp. freshly ground black pepper
  • 1 tsp. ground sumac
  • 2 TB extra-virgin olive oil
Instructions
  1. Combine the cucumbers, tomatoes, radishes, fennel, scallions and parsley in a large bowl and toss gently to combine.
  2. In a medium-sized bowl, combine the yogurt, lemon zest and juice, sugar, sumac and salt and pepper. Whisk in the olive oil in a steady stream until thoroughly incorporated.
  3. Pour the yogurt dressing over the vegetables and toss gently to coat.
  4. Cover and refrigerate for at least an hour prior to serving to allow the flavors to develop.
  5. Before serving, taste and adjust the seasoning if necessary.
