Brownies with Dried Cherries and Mango Puree
Serves: One dozen brownies
 
Ingredients
  • Brownies:
  • 4 oz. semi-sweet chocolate
  • 4 oz. unsalted butter
  • 2 eggs
  • 1 cup sugar
  • 1 tsp. each vanilla extract and espresso powder*
  • Pinch salt
  • 1 cup all-purpose flour
  • ½ cup dried tart cherries
  • Mango Puree:
  • 3 ripe mangoes, peeled and cut into chunks
  • ⅓ cup sugar
  • 2 TB water
Instructions
  1. Preheat oven to 350 and prepare a 8x8 baking pan by spraying it with nonstick baking spray or lining it with parchment paper.
  2. Melt the chocolate and butter together in a medium saucepan over very low heat stirring to ensure that it does not scorch. Remove from heat and allow to cool.
  3. Scrape melted butter and chocolate into the bowl of a standing mixer.
  4. Add sugar, vanilla, espresso powder, eggs and salt and beat until combined.
  5. Add flour and beat just until combined. Fold in dried cherries.
  6. Pour brownie batter into prepared pan and bake 25 minutes or until a skewer inserted in the middle comes out clean.
  7. Cool on a wire rack. Allow to cool completely before cutting into squares.
  8. To make mango puree, combine mango, sugar and water in a blender and puree until smooth.
  9. To serve, spoon mango puree onto a plate and top with a brownie!
Notes
*Espresso powder? What's that? Only the best thing to ever happen to your chocolate desserts. Buy some (I like the King Arthur brand) and add a little bit to every single chocolate dessert you make. The espresso is undetectable but it pumps up the flavor of the chocolate.
