Cold Pea Soup with Mint
 
Ingredients
  • 3 TB Butter
  • 1 yellow onion, finely diced
  • 3 cups fresh or frozen peas.
  • 2 cups chicken broth
  • ½ cup buttermilk
  • ¼ cup loosely packed mint leaves
  • Salt and pepper to taste
Instructions
  1. Melt the butter in a large Dutch oven or stock pot over medium heat.
  2. Add the onions and sauté over medium-low heat until softened but not browned, approximately five minutes.
  3. Add the peas and stir to combine.
  4. Add the chicken broth and bring to a boil.
  5. Turn down heat and simmer until the peas are tender, approximately two to three minutes.
  6. Remove from heat.
  7. Transfer the soup to a blender and add the buttermilk and mint and puree until smooth OR add the buttermilk and mint to the pot with the soup and puree using an immersion blender.
  8. Season to taste with salt and pepper.
  9. Chill for several hours until cold.
  10. To serve, garnish with a dollop of sour cream or plain yogurt and a mint leaf.
