Turkey Sloppy Joes

A quick and healthy weeknight dinner to please kid and adult palates.
Ingredients
  • 2 TB olive oil
  • 1 cup minced shallot
  • 2 cloves garlic, minced
  • 2 lbs ground turkey, preferably dark meat
  • 1 tsp cumin
  • 3 TB tomato paste
  • 1 15 oz can tomato sauce
  • 1 TB brown sugar
  • 1 tsp Worcestershire sauce
  • Juice of one lime
  • Hamburger buns for serving
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the shallot and garlic and sauté over medium-low heat until softened, about five minutes.
  3. Add the ground turkey and turn heat up to medium. Stir, breaking up any clumps, until meat has lost its pink color.
  4. Add the tomato paste, cumin and season with salt and pepper to taste, stirring to combine. Sauté a few additional minutes.
  5. Add the tomato sauce, brown sugar, and Worcestershire sauce and bring the mixture to a boil over high heat.
  6. Turn down heat and simmer until thickened.
  7. Just prior to serving, stir in the lime juice. Taste and adjust seasonings.
  8. Serve on warmed rolls.
